Detailed background data

It has been assumed that the food processing industry is located in Denmark. Assumed to be produced from raw pork collar, by removing fat. Mass balance has been established based on the dry mass,fat, and water content in the initial and final products according to the FRIDA database composition (DTU 2019). Manufacturing is neglected.
