Detailed background data

It has been assumed that the food processing industry is located in Denmark. Ingredients from a product reported in Open Food Facts (2020ad), assuming they are wasted by 3%. Energy for manufacturing is a very coarse estimate. It is assumed that most of the energy goes into rice cooking. We use the energy consumption for parboiled rice from Blengini and Busto (2009). Rice accounts for around 80% of the mass of sushi product, but this energy consumption is applied to 100% of the product mass. Seaweed ingredient (0.0104236 kg seaweed/kg sushi) is not included.
