It has been assumed that the food processing industry is located in Denmark. Ingredients are taken from the actual product as shown in Nemlig (2020m). Soy concentrate ismodelled as soy isolate. Salt equals the total salt content in the product based on its nutritional profile. Content in sugar and vinegar roughly assumed as 0.005 and 0.01 kg/kg product. Water in ingredients calculated as a balancing component. Manufacturing includes production, taken roughly as mayonnnaise production from Hetherington et al. (2012). The assumption is that this product requires not much processing or industrial cooking. Freezing is modelled as beef freezing from Agribalyse (ADEME 2020c).
