It has been assumed that the food processing industry is located in Denmark. Ingredients as reported in an Agribalyse data set (DEME 2020e). Manufacturing is based on Hetherington et al. (2012) for regular mayonnaise. 3% ingredients waste assumed. Retail is modelled assuming the following storage: Cooled.
